I have tried two recipes of this book, a Brie and Moz and every time try well, but absolutely horrible after a step of Agar of Agar. @In rodeo, am not really sure the one who the frames of Agar Agar powders Lucero is using in his recipes ( has purchased one he Maintaining mark of Powder by means of Amazon) but some quantities is asking (approx 1 Tablespoon + 1/2 cup of water for limit) is so only not correcting. Other recipes use on-line at least 1 cup of water and a Now the mark recommends to use that 1/2 teaspoon peels each cup of water or something to the long of these lines. A point is, does not trust this book for anything roughly doing hard vegan cheeses. In better, so only use this book for some inspirations of flavour - but do your investigation and the test was like this to use Agar Agar to take a right texture for your cheese before starts to do his recipes because his ingredients are hard to spend for and can be pricey also. Better to any to squander it!
